A delicious journey on the Silk Road | Dumpling and skewer pop–up at Noema
Take the excellent doughs of Bukharian cuisine, match them with techniques from Asia and the Levant, and you get the next hot meal, which walks the entire length of the Silk Road and makes a final stop at the Noema restaurant on Nachalat Binyamin.
Between June 8–9, the talented Chef Moshiko Avraham will host two special evenings, built with inspiration from the trade routes of the Silk Road, which will connect the Bukharian cuisine upon which the chef grew up with influences from Levantine, Chinese and Japanese cuisines. On the agenda: Handmade doughs, charcoal cooking techniques, emphasized acidity and plenty of kicking spices.
On the special menu, you will find a variety of dumplings and skewers at relatively accessible prices (starting from NIS 38 per dish), and just the names of the dishes make us drool. The list includes: Bichak (a baked pumpkin dumpling with ricotta and s'chug), lamb–stuffed cheburek, dushbara in clear chicken broth, chicken and fatback gyoza, and also charcoal dishes like Bukharian kebab or entrecote in a black garlic glaze. In the dessert arena, you will find: Labneh mousse with chak–chak and caramelized peach.
