Kosher-for-Passover Pizza
Ingredients for the base:
1 container cottage cheese (3% fat and up)
2 eggs
¾ cup almond flour
⅓ teaspoon salt
For the pizza sauce:
1 medium can tomato paste (240 ml)
1 level teaspoon granulated garlic
3 tablespoons oil
½ teaspoon oregano
1 teaspoon sugar
1 teaspoon salt
For topping:
Grated yellow cheese / mozzarella
Pizza toppings of your choice (olives / corn / mushrooms etc.)
Instructions:
Preheat the oven to 180°C (conventional top and bottom heat).
In a bowl, mix the cottage cheese, eggs, almond flour, and salt until well combined.
Line a baking tray with parchment paper and lightly brush it with oil.
Pour the mixture onto the tray and shape it into a round pizza base, making sure it is not too thin.
Bake the base without sauce for 25–30 minutes, until the edges turn golden.
Remove the baked base from the oven.
Spread the pizza sauce evenly over the entire surface (you may have extra sauce left over).
Add grated cheese and your chosen toppings.
Return to the oven for about 10 minutes, until the cheese melts and becomes bubbly.
